Our primal cuts are produced in the Villani factory in Castelfranco Emilia (MO), one of the last bastions of artisan charcuterie making.
The wide range of Pancettas is produced with selected pork, hand salted with “crystallised salt” and slowly cured for up to a maximum of six months. The melt-in-the-mouth mild flavour is sensational and for true gourmets.
The Coppa is produced using only Italian lean meat, cured for up to 95 days. Each coppa has a great personality and a delicate taste reminiscent of days gone by.
