QUALITY: fresh leg of porks bred in Italy, of our own selection, deboned and trimmed by hand, to maintain only the core of the ham. It is the finest part of the leg of pork also used for Culatello with rind. Seasoned only with fresh flavourings and hand-tied with natural string to give it the cured Culatello shape. It is then slowly steam-cooked at low temperatures to keep the meat soft.
FLAVOUR: the bouquet of natural flavours gives it a delicate gourmet taste.
