QUALITY: pork collar wrapped in two “lean” pork bellies with the fat trimmed off. After salting in sea-salt, and standing, the bellies are wrapped around the collar, then placed in a gut casing and tied in an elastic mesh which holds them firm throughout all subsequent phases through to curing. The resulting product is soft and easy to slice, producing firm, non-crumbling slices.
FLAVOUR: tasty due to the natural flavourings, but particularly sweet.
