QUALITY: made only from fresh Italian pork. The lean meat comes only from the finest cuts (shoulder and leg) while the fat, of equally high quality, is taken from the belly. The product is hand-processed: the deboned, denerved lean and the fat are left to stand for a whole night, as the country tradition requires. They are then “hot” minced, stuffed into a natural gut casing and hand-tied.

SPICES AND FLAVOURINGS: salt, black peppercorns and fresh garlic steeped in good Merlot red wine.

FLAVOUR: soft, fragrant and sweet-tasting.
