Culatello di Zibello PDO
From legs of pigs born and reared in Emilia-Romagna and lower Lombardy, selected and processed by expert hands according to the PDO specification that involves keeping only the heart of the ham, the most precious and noble cut. Tied and freshly trimmed, it is salted with only sea salt and black pepper and then massaged. This is followed by bagging in hand-sewn pork bladder and tightly tied with natural rope, before seasoning in humid underground cellars for at least 12 months. With an intense and persistent aroma and a sweet and delicate flavour.
