La Dotta is a mortadella prepared with Italian pork from the supply chain. Quality cuts are used such as shoulder and throat, which give it an intense pink colour and a unique texture. Ancient recipe with "Aglio di Voghiera DOP", "Sea Salt of Trapani IGP" and "Pistachio Verde di Bronte DOP", for the version with pistachio. It is filled in a natural ox bladder and tied by hand with rope. The final step is slow cooking on the stove. The result is a mortadella as tradition dictates: with a delicate but inviting aroma and a delicious taste.
