La Santo is our historic mortadella. Produced in compliance with the specifications of the Consorzio Mortadella Bologna PGI, using shoulders for the lean parts and throats for the lardons. Delicate, fragrant and very digestible thanks to the slow cooking on the stove and the light seasoning of fresh garlic. A careful and inviting balance of aromas and a unique taste, for a product that can be recognised even with your eyes shut. Hand-tied in the ox bladder version: the oldest natural casing, used since the Middle Ages to stuff mortadella. A casing that gives it a unique fragrance and taste during cooking, thereby maintaining its aroma.
Without gluten, milk derivatives, glutamate and added polyphosphates. Only natural flavours.
Shapes: available in natural bladder and in cylindrical and oval versions, of various weights and diameters. Also with pistachio.
