  The Dulcissima is a pancetta with rind from Italian pigs, in compliance with the specifications of the Piacentina PDO. Seasoned with sea salt and spices, it is left to rest and massaged to distribute the seasoning evenly. Then it is rolled up, tied and sewn by hand with twine along the two edges of the rind. Finally, drying and long seasoning in the cellar for at least 6 months follow. The result is a very sweet pancetta that melts in the mouth, with a refined flavour. An authentic tasting experience.
