Rolled rindless pancetta
Italian rindless pancetta and slightly defatted, salted and left to rest for a few days. It is then stretched out and seasoned with Mediterranean herbs and spices such as thyme and marjoram, then rolled up and immersed in the same mix of flavours for a greater external intensification of herbs. This is followed by seasoning in the cellar for at least 80 days. A good balance between the typical sweetness of this product and the scent of Mediterranean herbs. A skilful combination of elegance and finesse, in which herbs allow the fat to leave a "fresh" taste in the mouth.
