Irma

Irma is our founder, and her passion and vision ushered Villani into the world of mortadella. This recipe is our homage to her. Mortadella made from only Italian meat. Prepared with a mixture of nationally-sourced pork shoulder, leg and throat. Seasoned with natural stock and honey, with the addition of a secret ingredient following an ancient recipe. In a natural bladder casing, the original and most historically authentic for mortadella. Hand-tied with an elegant black linen string. This is followed by slow, lengthy oven-baking to achieve a unique, distinctive consistency.
