Only the tip of hip of the Black Angus breed, beef recognised for its excellent quality. Trimmed to obtain the unmistakable shape, it is dry salted with salt, pepper and aromatic herbs, then left to season. With a tender texture, it has an unmistakable and sweet taste thanks to the marbling that distinguishes it. Delicate, lightly flavoured bouquet. A bresaola for connoisseurs and refined palates.
