Only the fine tip of the hip, the innermost, soft and lean part of the bovine thigh. Trimmed to obtain the typical shape, it is salted and left to season hanging on the net, without being tied. The noble raw material and the way it is processed guarantee a healthy and appetising product. It is a very nutritious cured meat, by far the lowest fat content, rich in proteins, iron, minerals and vitamins and highly digestible.
