Black Pepper Pancetta is pure velvet at every bite. In spite of the black pepper referred to in the name, this Pancetta is only delicately spicy and is actually meltingly sweet.
To provide a stronger flavour without masking the taste of the Pancetta, rye bread is combined with radicchio and creamed Savoy cabbage. The delicious concoction is completed by Pear Pecorino cheese and Mediterranean pickled vegetables, which supply the filling with just the right acidic tang and crispness.

Procedure: A Journey into Flavours

●    start by lightly toasting the rye bread to bring out its flavour
●    spread the bread with the creamed Savoy cabbage as a base
●    add the Black Pepper Pancetta and leave it to melt a little
●    place the fresh radicchio and Pear Pecorino cheese slices on top
●    complete with a tablespoon of Mediterranean pickled vegetables as the crisp, tasty finishing touch
