Simply follow our step-by-step recipe to recreate this Tuscan delicacy. 

Procedure:

  1. Pour the flour into a bowl and add the crumbled yeast, sugar and slightly warm water.
  2. Mix until the ingredients are combined, add the oil and finally the salt.
  3. Cover the dough and let it rise for about 40 minutes in a warm place.
  4. Meanwhile, mix the ricotta with the chopped herbs and season with a pinch of salt and black pepper to taste. 
  5. Heat plenty of oil and bring it to 170°C.
  6. With the help of 2 tablespoons, drop balls of dough into the hot oil. Fry them a few at a time, drain them and place them on absorbent kitchen paper.
  7. Lightly salt them and serve them hot stuffed with herb ricotta and slices of Madame Culatta.

400 g type 00 flour  

300 ml water

8 g brewer’s yeast

1 tablespoon olive oil

10 g sugar

5 g salt

Sunflower oil for frying

200 g di Madame Seasoned Culatta

250 g fresh ricotta

2 tablespoons chopped fresh herbs (fennel, marjoram, chives, basil)

Freshly ground black pepper
