FLORENTINE COCCOLI WITH PEPPER, MADAME CULATTA AND HERB RICOTTA

Procedure:
- Pour the flour into a bowl and add the crumbled yeast, sugar and slightly warm water.
- Mix until the ingredients are combined, add the oil and finally the salt.
- Cover the dough and let it rise for about 40 minutes in a warm place.
- Meanwhile, mix the ricotta with the chopped herbs and season with a pinch of salt and black pepper to taste.
- Heat plenty of oil and bring it to 170°C.
- With the help of 2 tablespoons, drop balls of dough into the hot oil. Fry them a few at a time, drain them and place them on absorbent kitchen paper.
- Lightly salt them and serve them hot stuffed with herb ricotta and slices of Madame Culatta.
